A simple yet satisfying dish featuring caramelized sweet potatoes with a crispy Parmesan crust.

Ingredients

  • 4 large sweet potatoes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes, or until tender and golden, stirring halfway through.
  6. Remove from the oven and sprinkle with parmesan cheese.
  7. Return to the oven for an additional 5 minutes or until cheese is melted and bubbly.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

For the crispiest edges, avoid overcrowding the pan. Grate the Parmesan fresh if possible for better melting.
