Ingredients

  • 200g fresh salmon, finely diced
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped chives
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 4 slices of brioche bread
  • Trout roe for garnish

Instructions

  1. In a bowl, mix the diced salmon with olive oil, lime juice, chopped chives, Dijon mustard, salt, and pepper.
  2. For the avocado mousse, blend the avocado with lime juice until smooth, adding salt to taste.
  3. Toast the brioche slices until golden brown.
  4. To assemble, top each slice of brioche with the prepared salmon tartare and a dollop of avocado mousse.
  5. Garnish with trout roe before serving.
