Instructions
- Boil or fry the diced potatoes in oil until crispy and golden brown.
- In a separate bowl, whisk the eggs with salt and pepper.
- Scramble the eggs in the same pan after the potatoes are cooked, adding the cheese until melted.
- Warm up the tortillas in another pan or microwave.
- Assemble the tacos by placing the potato and egg mixture on the tortillas and adding any optional toppings.

Notes
For healthier options, try baking the potatoes instead of frying. You can also use whole wheat tortillas for added fiber.
