- 1 lb shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 pre-made tart shell
- 1/4 cup olive oil
- 1/4 cup fresh herbs (such as parsley, cilantro, or basil), chopped

- Microgreens or additional herbs for garnish (optional)
Instructions
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook until pink and opaque, about 5-7 minutes. Season with salt and pepper.
- In a bowl, combine diced avocados with lime juice, salt, and pepper to taste.
- In a separate small bowl, mix the remaining olive oil with chopped fresh herbs to create the herb oil.
- Assemble the tart by spreading the avocado mixture evenly in the tart shell, topping it with the cooked shrimp.
- Drizzle the herb oil over the top and garnish with microgreens or additional herbs if desired.
- Serve immediately and enjoy!
