Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 pre-made tart shell
  • 1/4 cup olive oil
  • 1/4 cup fresh herbs (such as parsley, cilantro, or basil), chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Microgreens or additional herbs for garnish (optional)

Instructions

  1. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook until pink and opaque, about 5-7 minutes. Season with salt and pepper.
  2. In a bowl, combine diced avocados with lime juice, salt, and pepper to taste.
  3. In a separate small bowl, mix the remaining olive oil with chopped fresh herbs to create the herb oil.
  4. Assemble the tart by spreading the avocado mixture evenly in the tart shell, topping it with the cooked shrimp.
  5. Drizzle the herb oil over the top and garnish with microgreens or additional herbs if desired.
