Simple Mushroom Chicken Stir-Fry

Ingredients

  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil (divided)
  • 1 pound chicken thighs or breasts, cubed
  • Salt and pepper, to taste
  • 3 large carrots, sliced

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Season the cubed chicken with salt and pepper, then add it to the skillet. Cook until browned and fully cooked, about 5-7 minutes.
  3. Once the chicken is done, carefully remove it from the skillet and set it aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and toss in the sliced carrots. Sauté for about 3-4 minutes until they begin to soften.
  5. Return the cooked chicken to the skillet, stir everything together, and let it heat through. Serve warm and enjoy!

Notes

For added depth, consider adding garlic or ginger while cooking. Pair with jasmine rice or quinoa for a complete meal.
