Ingredients

  • 3 pounds beef brisket
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 large onions, sliced
  • 3 bay leaves
  • 2 sprigs thyme
  • 4 cups beef stock
  • 2 tablespoons Worcestershire sauce

Instructions

  1. In a small bowl, combine smoked paprika, onion powder, garlic powder, salt, and pepper.
  2. Rub the seasoning mixture all over the brisket, ensuring even coverage.
  3. Place the sliced onions in the bottom of the slow cooker.
  4. Lay the seasoned brisket on top of the onions.
  5. Add bay leaves, thyme, beef stock, and Worcestershire sauce to the slow cooker.
  6. Cover and cook on low for 8–10 hours or on high for 4–5 hours until fork-tender.
  7. Remove brisket from the slow cooker and let it rest for 10 minutes before slicing against the grain.
  8. Serve warm with the cooked onions and some of the flavorful cooking juices.

Notes

For the best results, cook low and slow. If preferred, you can use alternative herbs.
