A festive spiced loaf using eggnog for richness, balanced with a crunchy streusel topping.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar for crumble
  • 1/4 cup all-purpose flour for crumble
  • 1 teaspoon ground cinnamon for crumble
  • 2 tablespoons unsalted butter, melted for crumble

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the eggs, eggnog, and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix the crumble ingredients together until crumbly.
  7. Pour half of the batter into the prepared loaf pan, sprinkle half of the crumble on top, then add the remaining batter and finish with the remaining crumble.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing and serving.

Notes

Keep an eye on the loaf after 50 minutes to avoid overbaking. Allow to cool slightly in the pan for better slicing.
