- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup eggnog
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar for crumble
- 1/4 cup all-purpose flour for crumble
- 1 teaspoon ground cinnamon for crumble
- 2 tablespoons unsalted butter, melted for crumble
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Beat in the eggs, eggnog, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a small bowl, mix the crumble ingredients together until crumbly.
- Pour half of the batter into the prepared loaf pan, sprinkle half of the crumble on top, then add the remaining batter and finish with the remaining crumble.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Notes
Keep an eye on the loaf after 50 minutes to avoid overbaking. Allow to cool slightly in the pan for better slicing.
