- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar

- 1 egg yolk
- 1/4 cup cold water
- 1 cup milk
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 3 egg yolks
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 375°F (190°C). In a mixing bowl, combine flour, butter, powdered sugar, and salt. Add the egg yolk and cold water, mixing until a dough forms. Roll out and press into a tart pan. Bake for 20 minutes or until golden.
- In a saucepan, heat milk over medium heat. In another bowl, whisk together sugar, cornstarch, and egg yolks. Gradually pour hot milk into the egg mixture, whisking constantly. Return to heat and cook until thickened. Stir in vanilla.
- Pour the pastry cream into the cooled tart shell and smooth the top.
- Arrange fresh strawberries on top of the pastry cream.
- In a small saucepan, heat strawberry jam until melted; brush over strawberries to glaze.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
Use ripe strawberries for the best flavor and consider gluten-free or dairy-free alternatives for dietary needs.
