- 2 slices of bread
- 1/4 cup ricotta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup fresh spinach
- 2 slices of mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Spread ricotta cheese on one slice of bread.
- Layer sun-dried tomatoes and fresh spinach on top of the ricotta.
- Place a slice of mozzarella cheese on top, then cover with the other slice of bread.
- Place the sandwich in the skillet and cook until the bread is golden brown, about 3-4 minutes on each side.
- Once both sides are golden and the cheese is melted, remove from heat and cut in half before serving.
Notes
Use fresh spinach for vibrant color and nutrients. Try adding a pinch of garlic powder or Italian seasoning to the ricotta for extra flavor.
