Ingredients

  • 2 slices of bread
  • 1/4 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup fresh spinach
  • 2 slices of mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Spread ricotta cheese on one slice of bread.
  3. Layer sun-dried tomatoes and fresh spinach on top of the ricotta.
  4. Place a slice of mozzarella cheese on top, then cover with the other slice of bread.
  5. Place the sandwich in the skillet and cook until the bread is golden brown, about 3-4 minutes on each side.
  6. Once both sides are golden and the cheese is melted, remove from heat and cut in half before serving.

Notes

Use fresh spinach for vibrant color and nutrients. Try adding a pinch of garlic powder or Italian seasoning to the ricotta for extra flavor.
