- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (canned or fresh)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 red bell pepper (sliced)
- Salt and pepper to taste
- Cooked rice for serving
- Green onions for garnish (optional)
Instructions
- Place the chicken breasts in the crock pot.
- In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Pour the mixture over the chicken.
- Add the sliced red bell pepper on top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
- Serve over cooked rice and garnish with green onions if desired.
Notes
Trim excess fat from the chicken to help the sauce adhere. If you prefer a thicker sauce, remove the chicken and simmer the liquid on the stovetop for a few minutes before returning the meat.
