A delightful slow-cooked dish combining tender chicken with a glossy sauce of pineapple, soy, and brown sugar, perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 red bell pepper (sliced)
  • Salt and pepper to taste
  • Cooked rice for serving
  • Green onions for garnish (optional)

Instructions

  1. Place the chicken breasts in the crock pot.
  2. In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Pour the mixture over the chicken.
  4. Add the sliced red bell pepper on top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  6. Serve over cooked rice and garnish with green onions if desired.

Notes

Trim excess fat from the chicken to help the sauce adhere. If you prefer a thicker sauce, remove the chicken and simmer the liquid on the stovetop for a few minutes before returning the meat.
