Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Stir in the lemon zest, lemon juice, and vanilla extract.
  6. In another bowl, mix together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool before serving.

Notes

For a more intense lemon flavor, fold in extra lemon zest or brush with lemon syrup after baking.
