- 1 pound sweet potato
- 2 large eggs
- 1/2 teaspoon ground nutmeg
- 1 cup white sugar
- 1/2 cup condensed milk
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 (9 inch) unbaked pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potato in water until tender. Allow it to cool and then peel.
- In a mixing bowl, mash the sweet potato.
- Add the eggs, nutmeg, sugar, condensed milk, softened butter, vanilla extract, and cinnamon. Mix until smooth.
- Pour the mixture into the unbaked pie crust.
- Bake in the preheated oven for about 45 minutes or until the filling is set.
- Allow it to cool before serving.
Notes
For an extra creamy pie, add another 1/4 cup of condensed milk. To save time, microwave the sweet potato instead of boiling. A sprinkle of toasted pecans on top adds nice crunch and flavor.
