- 1 large thinly rolled out pizza dough
- 3 tablespoons peanut butter (smooth or chunky)
- 2 teaspoons rice vinegar
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon olive oil

- 1 tablespoon freshly grated ginger
- 2 teaspoons honey
- 1/2 teaspoon sesame oil
- 2–3 tablespoons water
- 1 heaping cup cooked, shredded chicken
- 1/4 cup chopped red or green onion
- 3 tablespoons shredded carrot (moisture squeezed out)
- 1 1/4 cups freshly shredded mozzarella cheese
- 1/4 cup fresh chopped cilantro
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, whisk together the peanut butter, rice vinegar, soy sauce, olive oil, crushed red pepper flakes, grated ginger, honey, sesame oil, and water until smooth to make the peanut sauce.
- Spread the peanut sauce evenly over the rolled-out pizza dough.
- Layer the shredded chicken on top, followed by the chopped onion, shredded carrots, and then sprinkle with mozzarella cheese.
- Bake according to the dough’s package instructions, typically around 12–15 minutes, until the crust is golden and the cheese is bubbly.
- Remove from the oven and garnish with fresh chopped cilantro before slicing and serving.
Notes
Use fresh ingredients for the best flavor; make extra peanut sauce if you love it.
