Ingredients

  • 5 cups fresh spinach
  • 1 cup mandarin oranges, segmented
  • 1 cup pecans, toasted
  • 1 cup dried cranberries
  • 1 cup goat cheese, crumbled
  • 1 cup pomegranate seeds
  • 1/3 cup extra virgin olive oil
  • 3 tbsp Dijon mustard
  • 3 tbsp honey

Instructions

  1. Rinse the spinach thoroughly and pat dry. Place the dried spinach in a large bowl.
  2. Toss in the mandarin oranges, pecans, dried cranberries, goat cheese, and pomegranate seeds into the bowl with the spinach.
  3. In a separate bowl, whisk together the extra virgin olive oil, Dijon mustard, and honey until well emulsified.
  4. Drizzle the dressing over the salad and gently toss to combine everything evenly. Serve fresh, and enjoy!

Notes

For freshness, add dressing just before serving. You can prepare the salad components ahead of time and store separately.
