- 2 cups cooked turkey, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 4 cups chicken broth
- 1 cup frozen peas
- 1 cup heavy cream
- 2 tablespoons flour
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup biscuit dough or puff pastry (optional for topping)
Instructions
- In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté until they start to soften, about 5 minutes.
- Stir in the flour and cook for another minute.
- Gradually add the chicken broth while stirring to avoid lumps.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the cooked turkey, peas, heavy cream, thyme, salt, and pepper.
- If using, drop spoonfuls of biscuit dough or layer puff pastry on top.
- Cover and cook until the topping is cooked through, about 15-20 minutes.
- Serve hot with your favorite bread.
Notes
For a lighter option, consider using low-fat cream or substituting with coconut milk. Can also be made gluten-free with a suitable thickener.
