Ingredients

  • 2 cups cooked turkey, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup biscuit dough or puff pastry (optional for topping)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté until they start to soften, about 5 minutes.
  2. Stir in the flour and cook for another minute.
  3. Gradually add the chicken broth while stirring to avoid lumps.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Add the cooked turkey, peas, heavy cream, thyme, salt, and pepper.
  6. If using, drop spoonfuls of biscuit dough or layer puff pastry on top.
  7. Cover and cook until the topping is cooked through, about 15-20 minutes.
  8. Serve hot with your favorite bread.

Notes

For a lighter option, consider using low-fat cream or substituting with coconut milk. Can also be made gluten-free with a suitable thickener.
