Ingredients

  • 1 lb ground beef
  • 2 cups egg noodles
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat; drain excess fat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the cream of mushroom soup, beef broth, and season with salt and pepper.
  4. Bring the mixture to a simmer and then add the egg noodles.
  5. Cover and cook for about 10-12 minutes, stirring occasionally, until noodles are tender.
  6. Remove from heat and stir in the sour cream.
  7. Serve hot, garnished with chopped parsley.

Notes

For a lighter meal, use lean ground beef and low sodium broth. You can substitute sour cream with Greek yogurt for a tangy twist.
