- 1 lb ground beef
- 2 cups egg noodles
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can cream of mushroom soup
- 1 cup beef broth
- 1 cup sour cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large skillet, brown the ground beef over medium-high heat; drain excess fat.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the cream of mushroom soup, beef broth, and season with salt and pepper.
- Bring the mixture to a simmer and then add the egg noodles.
- Cover and cook for about 10-12 minutes, stirring occasionally, until noodles are tender.
- Remove from heat and stir in the sour cream.
- Serve hot, garnished with chopped parsley.
Notes
For a lighter meal, use lean ground beef and low sodium broth. You can substitute sour cream with Greek yogurt for a tangy twist.
