- 1 boneless, skinless chicken breast (6-8 ounces)
- 1 tablespoon olive oil

- 1 ripe avocado
- 1 tablespoon lime juice

- 2 slices of bread (sourdough, whole wheat, or ciabatta)
- 2 slices of cheese (Monterey Jack, provolone, or cheddar)
- Lettuce, tomato slices, or sprouts (optional)
- 1 tablespoon butter or mayonnaise
Instructions
- Pat the chicken breast dry with a paper towel. In a small bowl, combine olive oil, salt, pepper, garlic powder, and paprika. Rub this mixture all over the chicken breast.
- Heat a skillet over medium heat and add the seasoned chicken breast. Cook for 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and let it rest for a few minutes before slicing or shredding.
- In a small bowl, mash the avocado with a fork until creamy. Stir in the lime juice, salt, pepper, and optional red pepper flakes until well combined. Adjust the seasoning to your taste.
- Spread butter or mayonnaise on one side of each slice of bread. In the skillet, place one slice of bread, butter-side down. Top with one slice of cheese, then add the sliced or shredded chicken.
- Spread the avocado mixture evenly over the chicken. Top with the remaining slice of cheese and place the second slice of bread on top, butter-side up.
- Cook the sandwich over medium-low heat for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted. Gently press down with a spatula to ensure even cooking.
- Carefully remove the sandwich from the skillet and let it cool for a minute. Slice in half and serve immediately as a delicious meal or snack.
Notes
