A perfect blend of succulent chicken, creamy avocado, and melted cheese, all sandwiched between perfectly toasted bread.

  • Total Time: 35 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 1 boneless, skinless chicken breast (6-8 ounces)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (for chicken)
  • 1/4 teaspoon black pepper (for chicken)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt (for avocado)
  • 1/4 teaspoon black pepper (for avocado)
  • Pinch of red pepper flakes (optional)
  • 2 slices of bread (sourdough, whole wheat, or ciabatta)
  • 2 slices of cheese (Monterey Jack, provolone, or cheddar)
  • Lettuce, tomato slices, or sprouts (optional)
  • 1 tablespoon butter or mayonnaise

Instructions

  1. Pat the chicken breast dry with a paper towel. In a small bowl, combine olive oil, salt, pepper, garlic powder, and paprika. Rub this mixture all over the chicken breast.
  2. Heat a skillet over medium heat and add the seasoned chicken breast. Cook for 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and let it rest for a few minutes before slicing or shredding.
  3. In a small bowl, mash the avocado with a fork until creamy. Stir in the lime juice, salt, pepper, and optional red pepper flakes until well combined. Adjust the seasoning to your taste.
  4. Spread butter or mayonnaise on one side of each slice of bread. In the skillet, place one slice of bread, butter-side down. Top with one slice of cheese, then add the sliced or shredded chicken.
  5. Spread the avocado mixture evenly over the chicken. Top with the remaining slice of cheese and place the second slice of bread on top, butter-side up.
  6. Cook the sandwich over medium-low heat for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted. Gently press down with a spatula to ensure even cooking.
  7. Carefully remove the sandwich from the skillet and let it cool for a minute. Slice in half and serve immediately as a delicious meal or snack.

Notes

Use fresh ingredients for the best flavor. Experiment with different types of cheese and ensure proper cooking temperature to retain moisture in the chicken.
