A golden crisp shell filled with a silky potato and vegan cheese center, these pastries offer a delightful contrast of textures.

Ingredients

  • 1 package of puff pastry sheets
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 1 cup of vegan cheese shreds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a pot, boil diced potatoes until tender, about 10-15 minutes. Drain and mash.
  3. In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
  4. Combine the mashed potatoes, sautéed onions, vegan cheese, salt, pepper, and herbs in a bowl.
  5. Roll out the puff pastry sheets and cut into squares.
  6. Place a spoonful of the potato mixture in the center of each square.
  7. Fold the pastry over to form triangles and seal the edges.
  8. Place on a baking sheet and bake for 20-25 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

Keep the pastry cold until the last moment for better lift and crispness. If the filling is wet, blot it to avoid sogginess.
