- 1 package of puff pastry sheets
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 1 cup of vegan cheese shreds
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon fresh herbs (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a pot, boil diced potatoes until tender, about 10-15 minutes. Drain and mash.
- In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
- Combine the mashed potatoes, sautéed onions, vegan cheese, salt, pepper, and herbs in a bowl.
- Roll out the puff pastry sheets and cut into squares.
- Place a spoonful of the potato mixture in the center of each square.
- Fold the pastry over to form triangles and seal the edges.
- Place on a baking sheet and bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
Notes
Keep the pastry cold until the last moment for better lift and crispness. If the filling is wet, blot it to avoid sogginess.
