Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the beets, then wrap them in foil and roast for about 45-60 minutes, until tender.
- Allow the beets to cool, then peel and slice them.
- In a large salad bowl, combine mixed greens, sliced beets, crumbled goat cheese, and walnuts.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste.
- Toss gently to combine and serve warm.
Notes
Select beets of similar size for even roasting. Cool beets before peeling for easier skin removal.
