- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 cup diced Granny Smith apples
- 1/4 cup rolled oats
- 1 cup soft caramels, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together butter and sugars until light and fluffy.
- Add peanut butter and mix well, then incorporate eggs one at a time.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Combine dry and wet ingredients, then fold in diced apples and rolled oats.
- Chop up caramels and gently push them into scooped dough on the baking sheet.
- Bake until edges are golden, then let cool slightly on the pan.
Notes
For chewier cookies, be careful not to overmix the batter and remove them from the oven while they are slightly underdone.
