  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup white chocolate chips
  • 1/2 cup peppermint pieces or crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until smooth. Add in the vanilla extract and egg, mixing until well combined.
  4. Gradually add the dry flour mixture into the wet ingredients, stirring until just combined. Fold in the white chocolate chips and peppermint pieces.
  5. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 10-12 minutes, or until the cookies are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature butter and avoid overmixing the dough after adding the flour.
