Bright, creamy, and refreshingly simple Lemon Cream Pie Bars that are perfect for lazy afternoons.

Ingredients

  • 1 ½ cups crushed cookies
  • ½ cup melted butter
  • 8 oz cream cheese
  • 14 oz sweetened condensed milk
  • ½ cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed cookies and melted butter until well combined.
  3. Press the mixture into the bottom of a baking pan to form the crust.
  4. In another bowl, combine cream cheese, sweetened condensed milk, and lemon juice until smooth.
  5. Pour the filling over the crust and spread evenly.
  6. Bake in the preheated oven for 25-30 minutes or until set.
  7. Remove from oven and allow to cool, then refrigerate until chilled.
  8. Slice into squares and serve, optionally dusted with powdered sugar or lemon zest.

Notes

These bars can be stored in the fridge for up to four days. For a fun twist, you can add blueberries or switch lemon juice with lime juice.
