Ingredients

  • 3 tablespoons olive oil
  • 2 lemons (zested and juiced)
  • 4 garlic cloves (minced)

  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, garlic, salt, pepper, and paprika.
  3. Pat the chicken dry with paper towels and rub the seasoning mixture all over, including under the skin.
  4. Place the chicken in a roasting pan and garnish with fresh herbs.
  5. Roast in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving and serving.
