Bone-in chicken thighs with shatteringly crisp skin and a sticky maple apple cider glaze, roasted with apples and thyme in one skillet.

  • 8 bone-in, skin-on chicken thighs (about 3 pounds)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 1/2 cups fresh apple cider (not apple juice)
  • 1/3 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice (optional)
  • 2 tablespoons unsalted butter, cut into pieces
  • 2 firm, crisp apples (such as Honeycrisp or Gala), cut into wedges

Instructions

  1. Pat the chicken thighs completely dry with paper towels and season generously on both sides with the salt and black pepper. Let rest at room temperature for 15 minutes.
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place the thighs skin side down in a single layer and sear undisturbed 7 to 8 minutes until deeply golden and crisp.
  3. Flip and sear the second side 4 minutes until lightly browned. Transfer the chicken to a plate, leaving the rendered fat in the skillet.
  4. Reduce the heat to medium, add the sliced onion and cook 5 minutes, stirring often, until soft and starting to caramelize. Stir in the garlic and cook 1 minute more.
  5. Pour in the apple cider, maple syrup, Dijon mustard, apple cider vinegar, thyme, cinnamon and allspice. Stir well, scraping up the browned bits. Bring to a lively simmer and cook 5 minutes until slightly syrupy.
  6. Nestle the thighs back into the skillet skin side up, keeping the skin above the sauce line. Tuck the apple wedges between the pieces and spoon glaze over the meat.
  7. Transfer to a 425°F (220°C) oven and roast 20 to 25 minutes, until the skin is burnished and crisp, the glaze is thick and bubbling, and the thickest thigh reads 165°F (74°C).
  8. Transfer the chicken and apples to a warm platter to rest 5 minutes. Whisk the cold butter into the pan sauce until melted and glossy.
  9. Spoon the sauce over the chicken and apples, shower with fresh thyme and serve immediately.

Notes

Use fresh cloudy apple cider, not clear apple juice, for the best flavor. Keep the skin above the sauce line so it stays crisp. Leftovers keep 3 to 4 days refrigerated; reheat uncovered at 350°F for 15 to 20 minutes.
