- 2 apples, peeled and diced

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together flour, baking powder, salt, cinnamon, and sugar.
- In another bowl, whisk together egg, milk, and vanilla extract.
- Gradually combine the wet ingredients with the dry ingredients and stir until just combined.
- Fold in the diced apples.
- Drop spoonfuls of the batter onto a greased baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- If desired, dust with powdered sugar before serving.
Notes
For healthy variations, use unsweetened applesauce instead of sugar. Store in an airtight container for up to 2 days at room temperature or a week refrigerated.
