Ingredients
Scale
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs (or flax eggs for a vegan option)
- 1 cup whole milk (or almond milk for a dairy-free alternative)
- ½ cup vegetable oil (or coconut oil for a healthier option)
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 teaspoon instant espresso powder (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. This ensures your chocolate cake recipe doesn't stick and comes out perfectly
- Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. This step ensures even distribution of the leavening agents
- Combine Wet Ingredients: In another bowl, beat the eggs, milk, oil, and vanilla extract until well combined. If you're using flax eggs, let them sit for a few minutes to thicken before adding
- Blend Together: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can make the cake dense
- Add Boiling Water: Stir in the boiling water and espresso powder (if using). The batter will be thin, but that's what makes the cake moist
- Pour and Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean
- Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. This prevents the cake from continuing to cook in the hot pans
- Frost and Serve: Once cooled, frost with your favorite chocolate frosting. For a lighter option, try a whipped cream or Greek yogurt frosting
