- 1 3/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup orange juice
- Zest of 1 orange
- 1 cup semi-sweet chocolate chips
- For ganache:
- 1 cup heavy cream
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the milk, vegetable oil, eggs, vanilla extract, orange juice, and orange zest until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
- Fill the muffin cups about two-thirds full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins cool, prepare the ganache by heating the heavy cream until it simmers. Pour it over the chocolate chips in a bowl. Let sit for a few minutes before stirring until smooth.
- Once the muffins are cool, make a small hole in the center of each muffin and fill it with chocolate orange ganache.
