Delightful muffins combining rich chocolate and zesty orange for a perfect treat.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • Zest of 1 orange
  • 1 cup semi-sweet chocolate chips
  • For ganache:
  • 1 cup heavy cream
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the milk, vegetable oil, eggs, vanilla extract, orange juice, and orange zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
  5. Fill the muffin cups about two-thirds full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the muffins cool, prepare the ganache by heating the heavy cream until it simmers. Pour it over the chocolate chips in a bowl. Let sit for a few minutes before stirring until smooth.
  8. Once the muffins are cool, make a small hole in the center of each muffin and fill it with chocolate orange ganache.
