- 3 lb (1.4 kg) yellow onions, thinly sliced pole to pole
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper, plus more to taste
- 4 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 8 cups (2 quarts) low sodium beef broth
- 4 sprigs fresh thyme
- 2 bay leaves
- 12 slices baguette, cut 1/2 inch thick and toasted
- 2 cups (8 ounces) Gruyere cheese, freshly shredded
Instructions
- Halve, peel and thinly slice the onions into even half moons about 1/4 inch thick.
- Melt butter with olive oil in a Dutch oven over medium heat; add onions and salt, toss to coat, and cook 10 minutes until soft and translucent.
- Lower to medium low and cook 35 to 40 minutes, stirring and scraping every 5 minutes, until deep amber.
- Whenever dark fond coats the bottom, splash in 2 to 3 tablespoons of water and scrape it loose; repeat twice more.
- Stir in the garlic and cook 1 minute until fragrant, without letting it color.
- Pour in the balsamic vinegar, scrape the pot clean, and bubble 1 minute until the sharp smell softens.
- Add broth, thyme, bay leaves and pepper; simmer 20 to 25 minutes, then remove thyme stems and bay leaves and adjust salt.
- Toast the baguette slices at 400F for 8 to 10 minutes, flipping once, until golden and crisp.
- Ladle soup into 6 oven safe bowls, top each with 2 toasts and Gruyere, and broil 2 to 4 minutes until bubbly and bronzed; rest 2 minutes and serve.
