- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 large eggs, room temperature
- 1 cup granulated sugar
- 2/3 cup pumpkin puree (not pumpkin pie filling)
- 1 teaspoon lemon juice
- Powdered sugar, for dusting the towel
- 8 oz cream cheese, softened
- 6 tablespoons unsalted butter, softened
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
Instructions
- Heat the oven to 375°F and position a rack in the center of the oven. Line a 10×15-inch jelly roll pan with parchment paper, leaving a little overhang on the short ends, and lightly grease the paper so the delicate cake releases cleanly without tearing.
- Whisk the flour, baking powder, baking soda, cinnamon, cloves, and salt together in a medium bowl until evenly combined and fragrant. Sifting is not required, but take a moment to make sure no little pockets of baking soda remain hidden in the mix.
- Beat the eggs and granulated sugar in a large bowl on high speed for a full 4 minutes, until the mixture turns thick, pale, and ribbony. The batter should fall from the beaters in slow, lazy ribbons that hold their shape on the surface for a few seconds before melting back in.
- Beat in the pumpkin puree and lemon juice on low speed just until combined and evenly orange throughout. Gently fold in the dry ingredients with a wide spatula until no streaks remain, taking care not to deflate all that beautiful air you just whipped into the eggs.
- Spread the batter evenly into the prepared pan, nudging it gently into all four corners with an offset spatula for uniform thickness. Bake for 13 to 15 minutes, until the top springs back when lightly touched and the edges just begin to pull away from the sides of the pan.
- While the cake bakes, lay a clean, lint-free flour-sack towel on the counter and dust it generously with powdered sugar from edge to edge. Immediately invert the hot cake onto the sugared towel, peel off the parchment paper in one smooth motion, and roll the cake up inside the towel starting from a short end. Cool completely on a wire rack, about 1 hour.
- Beat the softened cream cheese and butter together until completely smooth and lump-free, scraping down the bowl once or twice. Beat in the sifted powdered sugar and vanilla until light and fluffy, about 2 minutes, then taste and adjust the sweetness if you like it bolder.
- Carefully unroll the cooled cake on the counter and spread the filling evenly over the surface, leaving about half an inch bare around the edges. Re-roll the cake snugly without the towel, starting from the same short end and tucking gently as you go so the spiral stays tight.
- Wrap the finished roll tightly in plastic wrap and refrigerate for at least 1 hour so the swirl sets firmly and slices cleanly. Dust generously with powdered sugar and cut with a sharp serrated knife just before serving for the prettiest spirals.
