Cranberry fluff salad on a calm two-stage plan: fresh cranberries are chopped fine and macerated overnight with sugar and orange zest, then folded the next day with real whipped cream, pressed pineapple and mini marshmallows. Toasted pecans go on at serving so they stay crisp. Tart, cloud soft and made ahead.

  • Total Time: 20 minutes of work, split over two days, plus overnight chilling
  • Yield: 10 servings 1x

Ingredients

Scale
  • 12 ounces fresh cranberries (about 3 cups), picked over and rinsed
  • 3/4 cup granulated sugar
  • 1 teaspoon finely grated orange zest, plus 1 tablespoon fresh orange juice
  • 1/4 teaspoon fine salt
  • 1 can (20 ounces) crushed pineapple in juice, drained and pressed dry
  • 1 1/2 cups heavy cream, very cold
  • 2 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 3/4 cup pecan halves, toasted and roughly chopped
  • Whole fresh cranberries, to serve (optional)

Instructions

  1. Pulse the cranberries in a food processor in short bursts until chopped into small pieces, roughly the size of grains of rice. Stop before they turn to puree.
  2. Scrape the berries into a bowl and stir in the granulated sugar, orange zest, orange juice and salt. Cover and refrigerate for 8 to 12 hours.
  3. Tip the pineapple into a fine sieve and press firmly with a spoon for a full minute, until the fruit feels almost dry (about 1/2 cup of juice will collect).
  4. Whip the cold cream with the confectioners’ sugar and vanilla in a chilled bowl until it holds soft peaks that just curl at the tip.
  5. Fold the macerated cranberries, with all their syrupy juices, into the whipped cream in three additions. Fold in the pressed pineapple the same way.
  6. Add the mini marshmallows and fold just until evenly scattered. Spoon into a serving bowl, cover and chill for at least 1 hour and up to 4 hours.
  7. Just before serving, shower the top with the toasted pecans and a few whole cranberries. Serve very cold.
