- 4 chicken breasts
- 1 cup cranberry sauce
- 1/2 cup orange juice
- 2 tablespoons honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix cranberry sauce, orange juice, honey, and soy sauce.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and sear chicken breasts until browned, about 3-4 minutes per side.
- Transfer chicken to a baking dish and pour cranberry-orange glaze over the top.
- Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through.
- Serve warm and enjoy!
Notes
Pat the chicken dry before seasoning for a better sear. Check doneness with a thermometer; 160°F yields tender chicken. Rest the chicken for five minutes after baking.
