  • 1 cup (2 sticks) unsalted butter, softened but still cool
  • 3/4 cup powdered sugar, plus more for dusting if desired
  • 1 tablespoon finely grated orange zest (from 1 large orange)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine salt
  • 2 cups all-purpose flour, spooned and leveled
  • 2 tablespoons cornstarch
  • 3/4 cup dried cranberries, finely chopped
  • 3 tablespoons coarse sparkling sugar, for rolling
  • 1 teaspoon extra orange zest, for finishing (optional)

Instructions

  1. Beat the butter and powdered sugar in a large bowl with an electric mixer on medium speed until pale, smooth, and creamy, about 2 minutes, scraping down the sides once halfway through.
  2. Add the orange zest, vanilla extract, and salt. Beat on low speed just until the perfume of orange rises and everything is evenly combined.
  3. Whisk the flour and cornstarch together in a separate bowl to prevent pockets of raw starch and keep the crumb silky.
  4. Add the flour mixture to the butter mixture in two additions, mixing on low speed until the dough looks shaggy and just holds together when squeezed. Do not overmix.
  5. Fold in the chopped dried cranberries with a sturdy spatula, distributing them evenly through the dough.
  6. Turn the dough onto a sheet of plastic wrap and shape it into a smooth log about 2 inches in diameter and 10 inches long, rolling it on the counter to even out the sides.
  7. Wrap the log tightly and refrigerate for at least 2 hours, or up to 3 days, until completely firm. Rotate the log once during chilling for the neatest rounds.
  8. Heat the oven to 325 F (165 C) and line two baking sheets with parchment paper. Pour the sparkling sugar onto a plate and roll the chilled log in it, pressing gently so it coats the outside evenly.
  9. Slice the log into 1/4 inch rounds with a sharp knife, wiping the blade clean every few cuts. Arrange the slices 1 inch apart on the prepared sheets.
  10. Bake for 13 to 16 minutes, until the edges look set and the bottoms are lightly golden. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
