Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup grits
  • 4 cups water or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a pot, bring water or chicken broth to a boil and add grits. Cook according to package instructions until thickened.
  2. In a large skillet, heat olive oil and butter over medium heat. Add onion, bell pepper, and garlic, cooking until soft.
  3. Add shrimp and Cajun seasoning, cooking until shrimp are pink and cooked through.
  4. Stir in heavy cream, season with salt and pepper, and simmer for a few minutes.
  5. Serve the shrimp mixture over a bed of grits, garnished with chopped green onions.
