Ingredients

  • 2 cups coconut milk

Instructions

  1. In a slow cooker, combine the vegetable broth, coconut milk, onion, garlic, carrots, celery, and thyme.
  2. Season with salt and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or until vegetables are tender.
  5. If desired, add cooked chicken or beans during the last 30 minutes.

Notes
