  • 1 medium butternut squash (about 2 1/2 pounds), peeled, seeded and cut into 1/2-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups arborio rice
  • 1/2 cup warm low-sodium chicken or vegetable broth, plus 1 tablespoon apple cider vinegar
  • 6 cups low-sodium chicken or vegetable broth, kept warm
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons unsalted butter, cut into pieces
  • 3/4 cup freshly grated Parmesan cheese, plus more for serving
  • 12 fresh sage leaves (optional, for the crispy topping)

Instructions

  1. Heat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper. Toss the squash cubes with 2 tablespoons of the olive oil, 1/2 teaspoon of the salt and the black pepper. Spread in a single layer and roast 25 to 30 minutes, turning once, until deeply golden and very tender.
  2. Pour the 6 cups of broth into a medium saucepan and bring to a gentle simmer, then reduce the heat to low so it stays steaming hot.
  3. Heat the remaining 1 tablespoon of olive oil in a large heavy pot over medium heat. Fry the sage leaves 30 to 60 seconds until crisp, then lift onto a paper towel. Keep the sage-scented oil in the pot.
  4. Add the chopped onion and the remaining 1/2 teaspoon of salt to the pot and cook, stirring often, 4 to 5 minutes until soft and translucent. Stir in the garlic and cook 1 minute more.
  5. Add the arborio rice and stir constantly about 2 minutes until the grains turn pearly at the edges.
  6. Pour in the 1/2 cup of warm broth mixed with the apple cider vinegar and stir until mostly absorbed, about 1 minute. Begin adding the warm broth one ladle (about 1/2 cup) at a time, stirring often and letting each addition absorb before adding the next, 18 to 20 minutes total, until the rice is tender with a slight bite at the center.
  7. Fold in the roasted squash, thyme leaves and nutmeg. Cook 2 to 3 minutes more, stirring softly, until the risotto looks loose and glossy.
  8. Remove from the heat and beat in the butter and Parmesan until melted and creamy. Cover and rest 2 minutes. Spoon into warm bowls and top with the crispy sage, extra Parmesan and fresh thyme. Serve immediately.

Notes

Keep the broth steaming hot the whole time for the creamiest texture. Leftovers keep 3 to 4 days refrigerated; reheat gently with a splash of warm broth. Roast the squash up to 2 days ahead for faster assembly.
