- 1 large butternut squash (about 3 pounds), halved lengthwise and seeded
- 1 large yellow onion, cut into wedges
- 4 cloves garlic, left unpeeled
- 3 tablespoons olive oil, divided
- 1 tablespoon unsalted butter (or 1 extra tablespoon olive oil for vegan)
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 bay leaf
- 4 cups low sodium vegetable broth
- 1/2 cup heavy cream, plus more for serving
- 1 teaspoon apple cider vinegar (optional, for brightness)
- 3 tablespoons toasted pumpkin seeds, for garnish
- Fresh thyme leaves, for garnish
Instructions
- Heat oven to 425°F (220°C). Line a large rimmed sheet pan with parchment.
- Rub squash cut surfaces with 2 tablespoons olive oil, salt, and pepper. Place cut side down; tuck onion wedges and garlic cloves around.
- Roast 35 to 40 minutes until fork tender with deep caramelized patches.
- Melt butter with remaining olive oil in a Dutch oven. Squeeze in roasted garlic, add roasted onion; cook 2 minutes until fragrant.
- Add squash flesh, nutmeg, bay leaf, and broth. Simmer 15 minutes.
- Discard bay leaf. Blend until completely smooth.
- Stir in cream and vinegar. Adjust salt to taste.
- Serve in warm bowls with a cream swirl, pumpkin seeds, and thyme.
Notes
The soup thickens as it cools; thin with a splash of broth when reheating. Freezes well up to 3 months.
