- 1 medium butternut squash
- 1 pound ground turkey
- 2 tablespoons olive oil

- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- Fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the butternut squash into bite-sized pieces.
- In a large bowl, toss the squash with olive oil, salt, pepper, garlic powder, onion powder, and paprika until well coated.
- Spread the seasoned squash on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until tender and lightly caramelized.
- While the squash is roasting, heat a skillet over medium heat and add the ground turkey.
- Cook until the turkey is browned and cooked through, about 7-10 minutes.
- Once the squash is done, combine it with the cooked turkey in the skillet, toss to mix.
- Serve warm, garnished with fresh parsley.
