A skillet of chicken in vibrant green salsa with rice and cilantro.

Ingredients

  • 1 lb chicken breast
  • 1 cup salsa verde
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chicken and season with salt and pepper. Cook until browned and cooked through, about 6-7 minutes.
  3. Stir in the salsa verde, cooked rice, black beans, and lime juice.
  4. Cook until everything is heated through, about 5 minutes.
  5. Remove from heat and stir in chopped cilantro.
  6. Serve warm.

Notes

For a lighter plate, replace white rice with cauliflower rice. Keep the heat controlled when browning the chicken for best results.
