- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup unsweetened shredded coconut
- 1/2 cup non-dairy ice cream (made with coconut milk or cashew cream)
- 1 cup mixed berries (such as blueberries, strawberries, and raspberries)
- 1/4 cup chopped nuts (such as almonds or walnuts)
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the rolled oats, almond flour, coconut sugar, and unsweetened shredded coconut.
- Transfer the mixture to the prepared baking sheet and bake for 15-20 minutes, or until lightly toasted.
- Allow the mixture to cool completely, then transfer it to a 9-inch (23cm) springform pan.
- Press the mixture into the pan to form the base of the Healthy Ice Cream Cake.
- Scoop the non-dairy ice cream into a separate bowl and mix in the vanilla extract.
- Pour the ice cream mixture over the base and smooth the top.
- Top the ice cream layer with the mixed berries, chopped nuts, and chia seeds.
- Freeze the Healthy Ice Cream Cake for at least 4 hours, or until set.
Notes
Consider using a variety of nuts or seeds to add texture and crunch to the dessert.
