Ingredients
2 large chicken breasts
½ cup barbecue sauce
2 tbsp honey
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1 cup corn kernels
1 cup shredded cheddar cheese
½ cup tortilla strips or croutons
½ cup ranch dressing
Olive oil, salt & pepper
Instructions
1. Season chicken, mix barbecue sauce and honey.
2. Grill chicken, basting with sauce.
3. Rest and slice chicken.
4. Assemble salad with greens, veggies, toppings.
5. Top with chicken, drizzle dressing.
6. Serve immediately.
Notes
Use fresh corn for extra flavor.
Keep dressing separate until serving.
