- 2 pounds brussels sprouts, trimmed and halved lengthwise
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 3 tablespoons pure maple syrup
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 cup dried cranberries
- 1/2 cup pecan halves, toasted and roughly chopped
Instructions
- Position a rack in the center of the oven and heat to 425 F (220 C). Line a large rimmed baking sheet with parchment paper.
- Rinse the brussels sprouts and pat them completely dry with a clean towel. Trim the stem ends, peel away any yellowed outer leaves, and halve each sprout lengthwise through the core.
- Place the halved sprouts in a large bowl. Drizzle with the olive oil, then sprinkle with the salt, pepper, and garlic powder. Toss thoroughly so every cut face is lightly coated.
- Arrange the sprouts on the prepared baking sheet in a single layer, cut side down, leaving space between them. Crowding causes steaming, which is the enemy of crispiness.
- Roast for 20 minutes without touching them. The undisturbed contact with the hot pan is what builds the deep caramelized crust.
- While the sprouts roast, whisk the maple syrup, balsamic vinegar, and Dijon mustard in a small bowl until smooth and glossy.
- Remove the pan from the oven and flip the sprouts with a spatula. Drizzle the maple balsamic glaze evenly over them and toss gently right on the pan to coat.
- Return the pan to the oven and roast 5 to 8 minutes more, until the sprouts are tender when pierced and the glaze is sticky and caramelized at the edges.
- Scatter the dried cranberries and toasted pecans over the hot sprouts. The residual heat plumps the cranberries slightly and makes them glisten.
- Transfer to a serving platter, scraping up all the caramelized bits and glaze from the pan. Serve warm.
