Gooey Maple Pecan Sticky Buns with Toasted Pecans

For the dough

  • 1 cup (240 ml) whole milk, warmed to about 110°F
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/3 cup (67 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter, melted and cooled slightly
  • 2 large eggs, at room temperature
  • 1 teaspoon fine sea salt
  • 4 to 4 1/2 cups (500 to 560 g) all purpose flour, plus more for dusting

For the cinnamon filling

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) packed dark brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the maple pecan topping

  • 3/4 cup (170 g) unsalted butter
  • 1 cup (240 ml) pure maple syrup, dark or amber grade
  • 3/4 cup (150 g) packed dark brown sugar
  • 1/2 teaspoon fine sea salt
  • 1 1/2 cups (150 g) pecan halves, toasted and roughly chopped
  • Flaky sea salt, for finishing (optional)

Instructions

  1. Warm the milk to about 110°F, stir in the yeast with a pinch of the sugar and rest 5 to 10 minutes until foamy and fragrant.
  2. Whisk in the remaining sugar, the melted butter, eggs and salt, then add 4 cups of the flour and stir into a shaggy, soft dough.
  3. Knead on a lightly floured surface for 8 to 10 minutes until smooth and elastic, adding flour a spoonful at a time only if the dough sticks badly.
  4. Place in a greased bowl, cover and let rise in a warm spot for 60 to 90 minutes, until doubled in size.
  5. While the dough rises, make the topping: melt the butter with the maple syrup, brown sugar and salt in a saucepan, then simmer gently for 2 minutes until slightly thickened.
  6. Pour the hot maple topping into a buttered 9×13 inch baking pan and scatter the toasted pecans evenly over it.
  7. Roll the risen dough into a 16×12 inch rectangle, spread with the softened butter and sprinkle evenly with the cinnamon sugar mixture.
  8. Roll up tightly from the long side, pinch the seam closed and cut into 12 equal buns with a sharp serrated knife.
  9. Nestle the buns cut side up over the pecan topping, cover loosely and let rise 30 to 45 minutes until puffy and touching.
  10. Bake in a preheated 350°F oven for 30 to 35 minutes, until deeply golden and the center bun springs back to a light touch.
  11. Rest the pan 5 minutes, then invert confidently onto a large serving platter; scrape any remaining topping and pecans over the buns and finish with flaky salt if you like.
