Ingredients
1 2/3 cups all-purpose flour
1 cup sugar
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 cup Libby’s 100% pure pumpkin
1/2 cup vegetable oil
1/3 cup water
Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
3. In a separate bowl, mix eggs, pumpkin, oil, and water until smooth.
4. Combine wet and dry ingredients; stir until just combined.
5. Fold in nuts or chocolate chips if using.
6. Pour batter into the prepared loaf pan and smooth the top.
7. Bake for 55–65 minutes, or until a toothpick comes out clean.
8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to keep it soft and moist.
