- 500g boneless, skinless chicken breast, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 onion, cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 10 wooden skewers, soaked in water for 30 minutes
- Sumac or paprika for garnish (optional)
Instructions
- In a large bowl, whisk together olive oil, garlic, lemon juice, parsley, oregano, salt, and black pepper to create the marinade.
- Add the chicken pieces to the marinade and mix well to coat. Cover with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell peppers, onion, and cherry tomatoes onto the skewers, leaving a small space between each piece.
- Brush the grill with a small amount of oil to prevent sticking.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Remove the skewers from the grill and garnish with sumac or paprika, if desired.
- Serve the Perfect Pool snacks hot, straight from the grill.
Notes
For best results, do not overcrowd the skewers and keep an eye on the grill temperature.
