Ingredients
Scale
- 3 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted and cooled slightly
- 1 teaspoon vanilla extract
- 3/4 teaspoon anise extract, or 1/2 teaspoon anise oil
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon fine sea salt
- Powdered sugar, for dusting
Instructions
- Whisk the flour, baking powder and salt together in a medium bowl.
- Beat the eggs and sugar in a large bowl for about 3 minutes, until pale, thickened and falling from the whisk in a ribbon.
- Stir in the melted butter, vanilla and anise until glossy and even.
- Fold the dry ingredients into the egg mixture just until no flour streaks remain. Rest the batter for 10 minutes.
- Heat the pizzelle iron until its ready light cycles off. Brush the plates very lightly with butter if the iron is not nonstick.
- Place a heaping tablespoon of batter slightly behind the center of each grid. Close the lid and press until the steam slows, 30 to 45 seconds.
- Lift the cookie out with a fork, trim the ragged edge with a round cutter if you like, and lay it flat on a rack to cool and crisp.
- Repeat until the batter is gone. Dust with powdered sugar before serving.
