Ingredients
12 oz mezzi rigatoni
1 cup fresh ricotta cheese
1 lemon (zest + juice)
2 tbsp unsalted butter
¼ cup grated Parmesan
2 cloves garlic, minced
¼ cup reserved pasta water
Salt & pepper
Fresh basil or parsley
Instructions
1. Cook mezzi rigatoni, reserve pasta water.
2. Zest and juice the lemon.
3. Melt butter, sauté garlic.
4. Add ricotta, lemon zest and juice, pasta water.
5. Toss pasta, add Parmesan, season.
6. Serve with herbs and extra zest.
Notes
Use fresh ricotta for best texture.
