Rustic Roasted Garlic Chicken with Asiago Cream

A cozy weeknight classic featuring juicy chicken thighs, caramelized garlic, and a silky asiago cheese cream.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 whole head of garlic, cloves separated but left whole (about 10–12 cloves)
  • 1 tablespoon fresh thyme leaves, plus extra sprigs for roasting
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • 1 cup asiago cheese, grated
  • Optional: a squeeze of lemon juice to brighten the asiago cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, place the chicken thighs and season generously with salt and pepper.
  3. Add the whole garlic cloves and fresh thyme around and under the chicken.
  4. Drizzle with olive oil and toss gently to coat everything.
  5. Roast in the preheated oven for 25–30 minutes until the chicken reaches 165°F (74°C) and skin is golden brown.
  6. Meanwhile, prepare the asiago cream by combining heavy cream and grated asiago in a small saucepan over low heat. Stir until the cheese melts and the mixture is smooth.
  7. When the chicken is out of the oven, pour the warm asiago cheese gravy over the roasted chicken and garlic just before serving.

Notes

For extra garlic flavor, roast garlic under the chicken skin. Adjust seasoning and cooking times as necessary for swaps.
