Ingredients

- 2 pounds beef stew meat, cut into bite-sized pieces
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 2 bay leaves
- Salt, to taste
Instructions
- In a slow cooker, combine beef, carrots, potatoes, onion, and garlic.
- Pour in the beef broth and add thyme, black pepper, bay leaves, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 7-8 hours or until the beef is tender.
- Remove bay leaves before serving.
- Serve warm and enjoy your hearty stew!
Notes
For a lighter version, replace beef with turkey or chicken and increase the volume of vegetables.
