Whipped Shortbread Cookies

Butter whipped a full five minutes until nearly white, folded with powdered sugar, flour and cornstarch, then scooped, fork pressed and baked low until the tops turn matte. The cornstarch cuts the gluten, so each pale cookie dissolves on the tongue instead of snapping, exactly what a Christmas tin asks for.

  • Total Time: 30 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
  • 1 cup unsalted butter, softened but still cool to the touch (226 g)
  • 1/2 cup powdered sugar, plus more for dusting and for the fork
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1/4 cup cornstarch
  • 1/4 teaspoon fine sea salt
  • Candied cherry halves or sprinkles, optional, for the centers

Instructions

  1. Beat the butter alone on medium high for 5 full minutes, scraping the bowl once, until nearly white, glossy and doubled in volume.
  2. Add the powdered sugar and vanilla and beat 2 more minutes, until the mixture looks like a pale, fluffy frosting.
  3. Sift the flour, cornstarch and salt over the bowl. Mix on the lowest speed only until a soft dough forms, about 1 minute.
  4. Rest the dough in the refrigerator for 20 minutes. Heat the oven to 300 degrees and line two baking sheets with parchment.
  5. Scoop tablespoon sized balls, set them 2 inches apart, and press a gentle crosshatch into each with a fork dipped in powdered sugar. Add a cherry half if using.
  6. Bake 15 to 18 minutes, until the tops look matte and dry and the bottoms are barely blond. Rest 10 minutes on the sheet, then cool completely on a rack and dust lightly with powdered sugar.
