Instructions

  1. Heat the oven to 350°F and line an 8×8 inch metal pan with a parchment sling, leaving overhang on two sides for easy lifting. Lightly grease the exposed corners. Position the rack in the center of the oven so the bars bake evenly from top and bottom. Browning the butter takes about eight minutes and rewards you with deep, nutty flavor.
  2. Brown the butter: melt it in a light-colored saucepan over medium heat, swirling often, until it foams, then turns amber and smells like toasted hazelnuts. Pour it immediately into a large mixing bowl, scraping in the browned bits, and let it cool for five minutes so it does not scramble the eggs.
  3. Whisk the brown sugar and granulated sugar into the warm butter until smooth and glossy. Add the eggs and the yolk one at a time, whisking well after each, then whisk in the vanilla and the orange zest. The mixture should look thick and slightly lightened in color.
